I am building the code practice oscillator shown here:
The output impedence is 2K ohms. I would like to use and 8 ohm speaker. Is there a way to do this without an output transformer?

The short answer is "not really". You could do it with a set of high impedance headphones, or you could remove an output transformer from an old clock radio.
