headset device?

I picked up a device that has a phono plug with 6 (positive and negative) available connections, about the size of headset pins. Is this for multiple headsets?

Yes - it was used so several people could listen at the same time. There are dozen of different styles and brands - it could even be a collectible category in its own right.

Also picked up phono plugs with just a round end missing the wire. I take it this was the design of the day for a single headset use?

What you have there is a standard mono headphone plug.
You still have two ear pieces, but it's wired for mono.
The other box you have with all the jacks on it is most common used for translation. As to have a Spanish speaker, and a translator speaking in English through the headphone sets.
