I need to replace a Capacitor that is a .1 Uf 1000 volt. Can I use two .05 600 Volt in parrallel.

You'll wind up with 0.1µF at 600V. So if you actually need the 1000V rating, the answer is no. However there were times when high-voltage capacitors were used at lower voltages, to get other characteristics like low leakage. In that case a lower-voltage replacement would be all right.
