are IF cans used in FM reception? I am aware that the IF in FM receivers is 10.7 MHz, but do they use IF cans, like they do in AM receivers, or do they use an air coil?

Yes, FM uses IF "cans" or transformers just like AM. Alignment is different as you peak not only for maximum signal, but also have to allow for a wider bandwidth.
