I believe that since the "S" is grounded, and the grids are labeled "G1, G2, and G3", the "S" would be shield.

You're right, except in the 6SA7, it does connect to the screen grid too.

S in the schematic is shown as pin #1. It's the shell for metal tubes and base on tubes with lower metal section. For metal 12SA7 it also connects to grid #3.

Pin 1 on this tube is grid 5 according to RCA Tube Manual. It actually show it as S G5.

You are right Grid #5. SA7 is the only tube I know of that is connected differently between metal and glass tubes. I've never seen an interchangeably problem due to this difference?
